FAQs
Where are you located? We are located in the great City by the Lake, the Second City, the Windy City, the City of Broad Shoulders - Chicago, Illinois! We do not currently operate a “brick-and-mortar” storefront location.
Where do you bake your cookies? Lindy is a City of Chicago-licensed Shared Commercial Kitchen User at Envision Foods' Idelle Kipperman Kitchen, located in Humboldt Park. She is also certified as a City of Chicago Certified Foodservice Manager, maintains her State of Illinois Food Service Sanitation Certification, as well as the food industry's standard ServSafe Certification.
What is a shared commercial kitchen? A shared commercial kitchen is an innovative business and community development mechanism used by budding food entrepreneurs that choose not to operate a full “brick-and-mortar” store for any number of reasons. This allows foodpreneurs the ability to focus on product development, building a customer base and longer range business/marketing planning. In Chicago, shared commercial kitchens are licensed facilities similar to any other food business, and are operated by a licensed shared commercial kitchen operator for use only by licensed shared commercial kitchen users. Stringent food sanitation and health code requirements must be met and are subject to inspection like all restaurants and food handling businesses. Ingredients – What ingredients are in your cookies? Lindy’s Cookie Studio uses only high-quality ingredients: butter, flour, sugar, eggs, pure vanilla, and salt. That’s all, folks!!
Ingredients, Part Two – What’s on the top of your cookies? We use a high-quality fondant. Occasionally we hear people say they don't like fondant, and that might be because they’ve had some of the lesser quality stuff that’s out there. Our cookies truly do taste as good as they look. Fondant ingredients: powdered sugar, glucose (sugar), water, vegetable shortening, glycerine, and leaf gelatin.
Allergens Our cookies include dairy (eggs), flour (gluten), and while we do not use nuts in our recipe, for those most sensitive to nut allergies, we work in a commercial kitchen where the presence of nuts is there.
Other dietary considerations We do not yet carry gluten free, vegan, or keto treats.
Shelf Life For maximum freshness, we strongly urge our customers to enjoy the soft, delicious goodness of our cookies as soon as possible and within the first week of receiving them. However, if kept wrapped at room temperature, they can be eaten up to three weeks. Important note: keep cookies away from direct sunlight, humidity and warmer temperatures. Refrigerating cookies can cause condensation, so we don’t recommend that.
Shelf Life & Saving Well, first of all, you can always order more cookies! But if saving some for later, they can be easily frozen for up to 4 months if left in the wrapper and placed inside a food storage container, plastic wrap or Ziploc bag. Before enjoying, remove from freezer and let thaw at room temperature for 1 to 2 hours. If the cookies were tightly packed in the freezer, be sure to unpack them to thaw properly. Best results for maximum freshness occur when freezing upon initial receipt of cookies.
Traveling with your Cookies If traveling by road or air, treat your cookies like you would like to be treated! No hot or humid conditions. (Just say no to the trunk!) Pack cookies tightly so that the cookies do not move when gently shaking. How do you know if they can move? TEST IT. Even the slightest HINT of movement means that the cookies can shift during travel and potentially break. Unless there are detailed cookie elements that dictate otherwise, pack against each other and use tissue paper, bubble wrap or newspaper to cushion each side of the box until the cookies absolutely cannot move!
Alternatively, you can individually wrap each pre-wrapped cookie with a small piece of bubble wrap. Do not stack other travel items on top of the box of cookies, and if flying, consider putting under the seat in front of you. Please also note that TSA can be different at each airport, so you might have to keep it open enough for agents to see inside, then re-pack again at the gate! We don’t make the TSA rules - sorry!
